Raised Doughnut Recipe

PREP TIME: 2 hours 10 minutes - 3 hours depending on rise times      COOK TIME: 4 minutes      SERVINGS: 10-12

Ingredients

1 cup lukewarm milk
1 teaspoon sugar
2 1/2 teaspons active dry yeast
1/2 teaspoon salt
1/4 cup sugar
1 egg
2 Tablespoons butter
2 Tablespoons shortening
3 cups flour

Directions

In a stand mixer bowl, stir together lukewarm milk, 1 tsp of sugar, and yeast. Let sit for 10 minutes until foamy and yeast is activated.

Add to the bowl the salt, sugar, egg, butter, shortening, and 2 cups of the flour. Mix for a few minutes at low speed. Beat in remaining flour, 1/2 cup at a time, until the dough no longer sticks to the sides of the bowl. Knead about 5 minutes, or until smooth and elastic. Place the dough into a greased bowl, and cover. Set in a warm place to rise until double - about 1 - 1 1/2 hours.

Turn the dough onto a floured surface, punch it down and roll out to 1/2 inch thickness. Cut out 10-12 donuts using a 3-inch round cutter for the outer edge and a 1-inch round cutter to remove the center. Cover loosely with greased plastic wrap or cloth towel. Let doughnuts sit out to rise again until double - 45 minutes to 1 hour.

Heat oil to 350°F (175°C) in a deep-fryer or large saucepan. Gently slide the doughnuts into the hot oil, working in small batches of 2 or 3 at a time. Fry on each side until light golden brown and turn once after about 2 minutes. Drain the doughnuts on paper towels to absorb oil. Dip doughnuts into cinnamon sugar mixture or glaze.
