Cranberry Orange Scones
These scones have become a favorite recipe to make. The sour cream gives them added moisture and freezing them for a short time before putting them in the oven makes a light, flaky scone.
Ingredients
2 cups self rising flour
1/3 cup granulated sugar
8 Tablespoons salted butter
1/2 cup Craisins
1/4 cup sour cream
1/4 cup milk
1 teaspoon vanilla
1 orange - juiced
1 large egg
TOPPING
Orange juice
Sparking sugar
Directions
Preheat oven to 425F (175 C).
Add the flour, sugar and butter into the food processor and pulse just until butter is broken up. Mix sour cream, milk, vanilla, egg, juice from the orange and orange zest together. Pour the liquid mixture into the food processor and pulse until the dry ingredients have been moistened.
Divide the dough into 8 parts and place in a scone pan or shape into a circle and slice into 8 portions. Place in the freezer and chill for 20 minutes to solidify the butter and make these light and flaky.
Bake for 20-22 minutes. Let cool and then drizzle with orange juice and sparking sugar.
