White Cake Recipe

Ingredients
2 1/2 cups cake flour
1 1/4 teaspoons baking powder
1/2 teaspoon salt
1/3 cup unsweetened applesauce
1 teaspoon vanilla extract
1/2 cup milk
1/2 cup water
4 large egg whites
1/4 teaspoon cream of tartar
1 1/2 cups sugar
Directions
Preheat oven to 375°F (191°C). Grease two 9-inch cake pans and line the bottoms with a parchment round. Grease and flour the paper and sides. In a small bowl, mix the flour, baking powder and salt. In a large bowl, beat together the applesauce, vanilla extract, milk and water for about 2 minutes.
In another bowl, beat the egg whites and cream of tartar until stiff peaks form. Gently fold into the cake batter. Pour batter evenly into the pans and bake for 25-30 minutes. Cool cakes for about 15 minutes in the pan, and then remove and place on a cooling rack.
