Almond Raspberry Coffee Cake

An easy recipe for a delicious coffee cake to start your day off right.

Ingredients

2 cups flour
2/3 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 teaspoon almond extract
2 large eggs
1/2 cup sour cream
1/2 cup milk
1/4 cup butter, softened

Filling
1 cup rasberries
3 Tablespoons brown sugar
Topping
1/4 cup sugar
1/2 teaspoon cinnamon
1 Tablespoons butter
1/4 cup sliced almonds
Glaze
1/2 cup powdered sugar
2 t milk
1/2 t vanilla

Directions

Preheat oven to 375°F (191°C). Grease a 9-inch cake pan and line the bottom with a parchment round. Grease and flour the paper as well as the side of the pan. In a large bowl, combine flour, sugar, baking powder, baking soda and salt. In a small bowl, mix together sour cream, milk, butter, almond extract and eggs. Add the wet ingredients to the flour mixture. Stir just until moist.

Pour 2/3 of the batter into the pan. Spread raspberry mixture evenly over the batter. Spoon remaining batter over raspberry filling. Sprinkle topping over the batter. Bake for 40-45 minutes. Cool cakes for about 15 minutes in the pan, and then remove and place on a cooling rack. Drizzle with powdered sugar glaze when ready to serve.
