Instant Pot Chicken Broth

Making broth in your Instant Pot is so much quicker than cooking for hours on the stove top with the added bonus that you know exactly what is going into it. Every time I cook a whole chicken in the Instant Pot and get the meat off the bones, I add them back into the Instant Pot and use this recipe to make chicken broth. I freeze the stock in portion sizes and it’s ready to go whenever I need it.

Ingredients

1 whole chicken carcass
1 large carrot, halved
2 large celery stalks
1 medium onion, cut into quarters
1 head of garlic, halved crosswise
10 cups water
1 teaspoon salt
1 teaspoon pepper
2 bay leaves
3 sprigs of thyme

Directions

Place all ingredients into your Instant Pot and set valve to seal. Cook on high pressure for 45 minutes.

Allow Instant Pot to naturally vent for at least 30 minutes. Strain the liquid and use immediately or let cool and pour into containers to freeze.
