Chocolate Peanut Butter Cookies
These peanut butter cookies are soft, chewy and delicious. Best of all, they are modified for you to bake at elevations above 3.000 feet. This is a classic recipe, but you could modify by using mini peanut butter cups in the center in place of kisses for an added peanut flavor. Dip them in melted chocolate once they are cooked and have cooled and you will have a decadent chocolate covered cookie.
However you decide to finish them up, this is a must have recipe to bake up at high altitude!
Ingredients
1/2 cup sugar
1/2 cup firmly packed brown sugar
1/2 cup shortening
1/2 cup peanut butter
2 Tablespoons milk
1 teaspoon vanilla
1 large egg
1 3/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt

Directions
Preheat oven to 375°F (175°C).
In large bowl, combine sugar, brown sugar, shortening, peanut butter, milk, vanilla and egg.
Sift together the flour, salt, and baking soda. Add the flour mixture in third increments to the large bowl with the wet ingredients. Roll the dough and dip in sugar.
Line cookie sheets with parchment paper. Place 2 inches apart on cookie sheet with parchment paper and bake 10-12 minutes or until golden brown. Unwrap and inset the chocolate kisses into the center of the cookie. Let cool.
