Chocolate Chunk Pumpkin Muffins

INGREDIENTS

1/2 cup sugar
3/4 cup packed brown sugar
20 oz can pumpkin
3/4 cup applesauce
3/4 cup water
2 large eggs
3 cups flour
1/2 Tablespoon salt
2 Tablespoons baking powder
1 cup dry powdered milk
2 Tablespoons cinnamon
1/2 cup chopped walnuts
3/4 cup chocolate pieces

Directions

Preheat oven to 325°F (163°C).

In a large bowl, cream the sugar, brown sugar, pumpkin, water, applesauce and eggs together.

Sift together the flour, salt, baking powder, milk and cinnamon. Add the flour mixture to the large bowl with the wet ingredients and mix well. Stir in the chocolate pieces and nuts.

Grease 2 12-muffin pans or line the pans with paper cups. Pour batter into each until they are 2/3 full. Bake at 325°F (163°C) for 40-45 minutes.
