Muffins
These muffins are quick and easy to make. Keep the batter lumpy and don’t over mix to keep the muffin light and tender.
Ingredients
2 cups flour
1/4 cup sugar
2 teaspoons baking powder
3/4 teaspoon salt
1 large egg
1 teaspoon vanilla extract
1 cup milk
1/4 cup applesauce
Directions
Preheat oven to 425°F (218°C). Grease or line muffin tin with cupcake liners. In a large bowl, stir together flour, sugar, baking powder and salt. In a small bowl, mix the egg, vanilla, milk and applesauce.
Make a well in the center of the flour mixture and pour in the egg mixture. Stir gently with a fork, just until dry and wet ingredients are incorporated - about 12 strokes.
Fill muffin cups 2/3 full and bake 20-25 minutes, and when a toothpick inserted into the center of a muffin comes out clean. Serve warm.
